Senior Mac McCarthy ’14, fields a question from a classmate following his presentation on proanthocyanidins, a class of compounds prevalent in red wines. Eight senior chemistry majors are participating in a senior seminar studying the chemistry of wine with Cheyenne Brindle and Michelle Kovarik, assistant professors of chemistry. Following McCarthy’s presentation, based on the 2008 article “Chemical Synthesis of Proanthocyanidins in Vitro and Their Reactions in Aging Wines,” from the journal Molecules, the students and faculty members tasted and discussed five Georgian wines.
